OK found the Bug/problem. If you use the char: " in the PSK then this Tunnel and all following configured Tunnels are not working an bringing up the same error, also when the PSK in the following Tunnel is not using this special character.
Support Ticket is opened and Error is confirmed by Support, but want to place an update also here in case someone has the same problem.

Hello,
I got my Win 11 laptop (do not ask if I wanted it)
Win 11 needs SMB2 support from NSA325v2 which I had since ages.
Is there up-to-date (2023-2024) step-by-step instructions how to get SMB2 support on NSA325v2 with firmware NSA325_4.81(AAAJ.1)?
I searched some similar questions, but the threads there included many links which do not work anymore.
Any recent experiences and instructions for dummies (I know ssh but mostly that is it)?

You can try to set the default gateway manually, to see if it lasts longer, in that case.
su route add default gw 192.168.1.1 egiga0
Another option is to plug the network cable in the other port. I have no idea if that matters, as I still have no idea what is actually going wrong.
/Edit: Internet went down? Did that change anything in your local network? Like router settings, or a new router?

You then make another site to site 2
local policy 10.5.1.0/24
remote policy 10.8.0.0/23
Then on the other end will have
site to site 1
local policy 10.1.4.0/24
remote policy 10.5.1.0/24
and site to site 2
local policy 10.8.0.0/23
remote policy 10.5.1.0/24
