Force public IP address
I can force an internal IP address to the WAN port. The WAN port as 5 public IP address.
I can force an external IP address?
WAN Port 1
IP address xx.xx.xx.101
IP address xx.xx.xx.102
IP address xx.xx.xx.103 -- This should be my mail server
IP address xx.xx.xx.104
IP address xx.xx.xx.105
From what I can tell my mail server is sending out on xx.xx.xx.105 all the time. And I want it to send on 103
This is on a Zywall 310

Regarding to your request,
Go to Policy Routing> Source: Mail server, Destination: Any, Next hop: Wan interface, SNAT: The IP address which you want mail server to send mail from.

Do I need to make an object for the SNAT ip address?
If I type the IP address in that field and click save, it reverts back to outgoing-interface.

Yes, you need to create address object for SNAT IP address, and after created, just select it on SNAT field.
